“Fresh produce must be at the heart of every dish I create. I believe in treating ingredients with respect, and in doing so we honour the people from whom we source our produce,” he says. The homegrown chef was awarded Best Head Chef in Singapore at the Haute Grandeur Global Awards 2019.
