Beef Bolognese

A good bolognese is so much more than just a pasta sauce. The classic savory combination of lean, high-quality protein, veggies and tomato is a foundation for all sorts of meals to keep the weeknights fresh and new.

Ingredients

  • 1 pound ground Australian grassfed beef
  • 1 red onion, finely chopped
  • 1 large carrot, finely chopped
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, crushed
  • 2 Tablespoons tomato paste
  • 14 ounce can diced tomatoes
  • 1 Tablespoon extra virgin olive oil
  • 2 Tablespoons thyme leaves
  • 1 cup beef stock
  • 1/3 cup basil leaves, torn

Method

1. Heat oil in a large non-stick skillet over medium-high heat. Add onion and cook for 5 minutes until softened. 

2. Add garlic, carrot and celery and cook for 2-3 minutes. 

3. Add beef and cook for 5 minutes or until browned. 

4. Add tomato paste, tomatoes, thyme, and stock and bring to a boil.

5. Reduce heat and simmer for 10-12 minutes or until sauce has thickened to your desired consistency.

6. Season to taste and stir in basil leaves.
