Roti John - Beef Omelette Sandwich

A common sight in Singapore and Malaysia, elevate this simple and hearty recipe with premium Aussie beef!

Ingredients

  • 300g Minced Australian Beef 
  • 1 Store-Bought Baguette 
  • 1 tsp Curry Powder
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt
  • 1 Purple Onion, sliced
  • 5 Eggs, beaten
  • 2-3 tbsp Oil

 

For Assembly:

  • 1 Cup Shredded Cheese
  • 5-6 Lettuce Leaves
  • Sliced Cucumber
  • Mayonnaise, Tomato Ketchup and Sriracha Chilli Sauce (to taste)

Method

  1. Marinate the minced beef with curry powder, black pepper & salt for 15mins.

  2. Slice the store-bought soft baguette into three pieces. 

  3. Divide all of the ingredients into three portions, in order to make three sandwiches.

For each sandwich:

  1. Add oil to a frying pan and add the onions when the oil is hot and cook till onions are translucent. 

  2. Add the minced beef and stir fry till almost cooked.

  3. Add the beaten eggs and spread them around to cover the beef.

  4. When the eggs are half-cooked, place the baguette open-faced and downwards onto the egg and beef mixture. Use a spatula to press it into the omelette. 

  5. Flip the omelette and baguette over and top with additional fillings such as cheese, lettuce, cucumber and the accompanying sauces. Add to the desired quantity while being mindful not to overfill each sandwich.

  6. Use the spatula to flip one side to close the sandwich. Remove from the pan and it is ready to eat.
