Tender Beef Flank With Baked Root Vegetables

When you have a cut of beef as flavoursome as the flank, all you need is simple preparation to put together a healthy and wholesome weeknight meal. Try out this effortless recipe crafted by @Feliseet.

Ingredients

  • 1 Large Beef Flank Steak (400g)
  • 1 Large carrot, washed and diced 
  • A Handful of long beans, washed and sliced
  • 1 Large potato, washed and cubed

Marinade for the beef

  • 2 tbsp truffle olive oil
  • 2 Cloves garlic, minced
  • A pinch of Himalayan salt
  • 2 Tbsp light soy sauce
  • 1 Tbsp honey
  • 1/2 Ground black pepper

Method

  1. Prepare the steak by tenderising it. You can achieve this by gently pounding it and creating small holes with a fork.
  2. In a bowl, combine the marinade ingredients and ensure the steak is thoroughly coated.
  3. Marinate the steak for at least 2 hours or, for the best results, overnight. Cover the bowl and refrigerate it during marination.
  4. Rinse the vegetables, and chop as desired, ensuring evenness., Lightly coat them with a small amount of oil. Sprinkle a pinch of salt, then bake them at 185 degrees Celsius for approximately 25-30 minutes.
  5. After marinating, pan-fry the steak over medium heat until it reaches your desired level of doneness. Rest the steak for a few minutes, slice and serve it hot alongside the baked vegetables.
