Ingredients

  • 2 bone-in Lamb Racks, French-trimmed (about 1.13kg each)
  • Himalayan pink salt, to taste
  • Ground black pepper, to taste
  • Garlic & Herb Crust:
  • 10 garlic cloves
  • 1 handful of fresh coriander (including roots)
  • 1 tablespoon rosemary leaves
  • 2 teaspoons thyme leaves
  • 50ml olive oil

Method

  1. Preheat the oven to 230 degrees Celsius (fan mode).

  2. If desired, trim any excess fat from the lamb racks. Season both sides of the racks generously with Himalayan pink salt and ground black pepper.

  3. In a food processor, combine garlic cloves, coriander, rosemary, thyme, and olive oil. Blend until it forms a smooth paste.

  4. Rub the herb marinade all over the lamb racks, ensuring they are evenly coated. Let the lamb marinate for at least 30 minutes at room temperature, or marinate overnight in the refrigerator for a deeper flavour.

  5. Place the marinated lamb racks in a roasting pan, bone-side down and roast in a preheated oven for 20-25 minutes for medium-rare doneness, or adjust cooking time according to your preferred level of doneness.

  6. If the French trim (cap) has been removed, reduce the cooking time to 15 minutes on one side and 5-10 minutes on the other side.

  7. Once cooked to your liking, remove the lamb from the oven and cover loosely with foil. Let it rest for about 10 minutes. This resting period allows the juices to redistribute, resulting in more tender and flavorful meat.

  8. After resting, slice the rack of lamb into individual chops. Worthy accompaniments to this could be a tzatziki sauce, roasted potatoes, and a fresh Greek salad.
