900g Frenched Lamb Cutlets
Marinade:
Finely chop the galangal and lemongrass. Pound them using a mortar and pestle until smooth to fully release their flavours.
In a large bowl, combine the galangal and lemongrass paste with the onion paste, ginger garlic paste, cumin, coriander, sugar, and salt. Mix well.
Add the lamb cutlets to the bowl, ensuring they are evenly coated with the marinade. Marinate in the fridge for at least 1 hour.
Arrange the marinated lamb cutlets in a single layer in the air fryer basket.
Cook for 15 minutes, flipping the cutlets halfway through to ensure even cooking.
